Winter at Clink: Where Fire Meets Flavour

Web Apple Pie

As the chill settles over Sumner and the waves crash a little louder against the shore, Clink transforms into a haven of warmth, flavour, and connection. Step inside and you’ll be greeted by the comforting crackle of our open fire, the gentle hum of conversation, and the unmistakable aroma of winter indulgence.

A Toast to the Season
This winter, we’re turning up the heat—literally and figuratively. Our cocktail list has embraced the elements, with smoky signatures and fiery twists that warm from the inside out. Whether it’s a mulled wine by the hearth, a port negroni or a flamed apple pie, every sip is a celebration of the season.

Cuisine to Warm the Soul
Our kitchen is embracing the heartiness of winter with dishes designed to comfort and delight. One standout this season? Our 800g Canterbury Angus Ribeye on the bone—perfect for sharing. Served with your choice of two sides and a sauce to suit your mood, it’s a showstopper built for long, lingering dinners by the fire

Welcoming Mitch Ransley & Our Evolving Team
We’re excited to introduce Mitch Ransley, our new Operational Manager, who brings over a decade of hospitality experience to Clink. With a sharp eye for detail, a passion for people, and a customer-first approach, Mitch is already making waves—streamlining service, energizing the team, and helping shape the next chapter of the Clink experience. Alongside him, you’ll notice some fresh faces on the floor and behind the bar, all bringing their own spark to the Clink family.

Coming Soon: Take a Walk on the Wild Side
Ready to shake off the winter blues? Keep your eyes peeled for our upcoming dinner and DJ collaboration: Take a Walk on the Wild Side. Expect bold flavours, unexpected pairings, and a soundtrack to match. It’s one night only, and it’s going to be unforgettable.

Whether you’re here for a quiet fireside cocktail or a delicious dinner with your favourites, Clink is your winter destination. Come closer, stay longer, and let the season surprise you.

Every Sunday from 2–5pm, we’re turning the volume down on the week and dialing up the feel-good vibes.

Join us by the fire for Sunday Sessions—laid-back afternoons of smooth jazz, funk, and soul from some of Ōtautahi’s finest musicians. It’s the perfect way to wind down the weekend, catch up with mates, or just soak in the atmosphere.

Our famous Clink FEAST is on offer all day from 12pm—ideal for a late lunch or early dinner. Pair it with a glass of mulled wine or something special from the bar, and you’ve got your Sunday sorted.

Come hungry, leave happy. We’ll see you by the fire.

Falling into Autumn

The nights and mornings are just getting tinged with darkness and it makes me start to think about flavours and textures that make the cooler seasons so wonderful.

We were really luck to get the opportunity to taste Te Mata Estate’s 2015 vintage at The George Hotel last week.

te mata

Wow what a great vintage and while many of the wines are ready to be enjoyed now, ‘The Coleraine’ will cellar well for many years to come. Look out for these wines on the new wine list that will be launching mid April. Over the coming weeks we will be tasting some wines on Friday’s from 6pm, a little taste as you arrive to gather some feedback. This week we start with Mt. Beautiful Winery from North Canterbury. By producing elegant, certified-sustainable, estate-grown wines, they have found a way to capsure in the bottle, the climate and the richness of the land.

Wines aren’t the only think getting a makeover – the cocktail list goes moody, the beers less fruity and the kitchen are busy developing some new dishes in the kitchen. Some of these will be getting a try out on the trust the chef menu which as many of you know is a fabulous, relaxed and interesting way to dine at Clink.
